Ingredients:
🌰 1/2 cup raw cashews (soaked)
🧄 1 garlic clove
🍋 2 tbsp lemon juice
🧂 1/4 tsp salt
🧅 1/4 tsp onion powder (optional)
💧 1–2 tbsp water
✨ 1 tbsp nutritional yeast (optional)
🥑 1 tbsp olive or avocado oil (optional)

Instructions:
1️⃣ Drain & rinse cashews.
2️⃣ Blend with garlic, lemon, salt, onion powder until creamy.
3️⃣ Adjust with water, lemon, or salt to taste.

INSTRUCTIONS
1️⃣ Dice onion + tomato, slice bell pepper.
2️⃣ Sauté onion in a drizzle of oil until golden.
3️⃣ Stir in 1 cup water + tomato paste, season with paprika + salt.
4️⃣ Add tomatoes + bell pepper, cook 5 mins.
5️⃣ Mix in kidney beans, heat through.

How to:
Coat in oil + spices ➤ Roast at 400°F for 25–35 mins ➤ Shake pan halfway ➤ Let cool for max crunch.

2. Add beans, cumin & salt. Stir in rice.
3. Pour in broth, bring to boil, cover & simmer 15 mins.
4. Stir in black bean sauce, fluff & serve warm.

You’ll need:
– 1 lb pasta (I used angel hair)
– Pinch of salt
Sauce:
– 1 cup raw cashews (soaked 5 mins in hot water)
– 200 ml veggie broth
– ½ yellow onion, diced
– 1 garlic clove
– 1 tbsp lemon juice
– 1 tbsp nutritional yeast
– Pinches of: salt, black pepper, paprika, chili flakes, cayenne

To make:
1️⃣ Cook pasta as usual.
2️⃣ In a pan, simmer onion in veggie broth until mostly evaporated.
3️⃣ Blend soaked cashews, sautéed onion, garlic, lemon juice, nutritional yeast & seasonings until creamy.
4️⃣ Mix sauce into drained pasta.

1 block firm tofu (14 oz)
1 tbsp olive oil
2 tbsp soy sauce/tamari
2 tbsp nutritional yeast
1 tsp smoked paprika
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp cumin
1/4 tsp chili powder (opt.)
Pinch salt & pepper
Juice of 1/2 lime (opt.)

Instructions:
1️⃣ Press tofu 10–15 min, then shred with a grater or by hand.
2️⃣ Mix marinade: soy sauce, nooch, spices, lime.
3️⃣ Coat tofu well.
4️⃣ Heat oil in skillet, cook tofu 5–7 min until crispy & golden.
5️⃣ Serve in tacos, burritos, or bowls 🥗🌯

🥣 1 tsp Better Than Bouillon + 2 cups hot water
🥔 5 golden potatoes
🥩 1 bag Beyond Steak
🧂 Salt to taste

Steps:

1. Boil diced potatoes until soft, then drain.
2. Heat Beyond Steak with ½ cup water for 5–10 min.
3. Sauté diced onion + shredded carrot in oil.
4. Add broth + tomato sauce to veggies, stir well.
5. Add potatoes + steak, simmer a few min.
6. Season to taste + enjoy solo or with crusty bread!

Instructions

1. Mix dry ingredients in a bowl.
2. Melt butter, stir in cashew butter until smooth.
3. Combine with dry mix, add milk, and stir until creamy.
4. Cook on a nonstick pan (no oil needed!) until bubbles form, flip, and cook 1–2 mins more.

• 1 tbsp Sazon Completa (Badia)
• 1 tbsp cane sugar

How to make them:
	1.	Thaw frozen ingredients + preheat oven to 400°F.
	2.	Cut pastry into 8 rectangles, roll each out slightly.
	3.	Sauté onion in oil, add Beyond Meat, then diced tomato + Sazon. Cook 2 more min.
	4.	Fill pastry rectangles, fold + seal edges.
	5.	Mix sugar + water and brush on top.
	6.	Bake 25–30 min until golden + flaky.

My husband grew up eating Arroz con Salchichas—so we made a vegan version with plant-based hot dogs, and it instantly became a favorite. One pot, super nostalgic, and so easy!

Ingredients:
• 2 cups white rice
• 3 cups water
• 1 tsp salt
• 2 tbsp oil
• 4 vegan hot dogs, sliced (we love Lightlife or Simple Truth)
• 1 pack Goya sazon con azafran
or
• ½ tsp turmeric
• ½ tsp garlic powder
• ¼ tsp cumin
• ¼ tsp smoked paprika (optional)

Instructions:
1. Add everything to your rice cooker, stir, and cook on the white rice setting. 
2. Fluff when done & enjoy warm! 🌭🍚✨

How to:

1. Heat oil in a pan over medium.
2. Add tofu cubes in a single layer, cook 4–5 min without touching.
3. Flip to brown other sides.
4. Add coconut aminos in the last 1–2 min — let it sizzle & caramelize.
5. Toss in your favorite seasonings, cook 30 sec more.
✨ Done! Crispy outside, tender inside.

You’ll need:
– 1 lb pasta (I used angel hair)
– Pinch of salt
Sauce:
– 1 cup raw cashews (soaked 5 mins in hot water)
– 200 ml veggie broth
– ½ yellow onion, diced
– 1 garlic clove
– 1 tbsp lemon juice
– 1 tbsp nutritional yeast
– Pinches of: salt, black pepper, paprika, chili flakes, cayenne

To make:
1️⃣ Cook pasta as usual.
2️⃣ In a pan, simmer onion in veggie broth until mostly evaporated.
3️⃣ Blend soaked cashews, sautéed onion, garlic, lemon juice, nutritional yeast & seasonings until creamy.
4️⃣ Mix sauce into drained pasta.
