Vegan Meat Pastries 🌱🥐

📝Ingredients You’ll Need:
* 1 pound Ground Beyond Meat
* 1 pack puff pastry dough (I recommend Pepperidge Farm brand — it’s accidentally vegan!)
* Half an onion - diced
* 1 organic tomato - diced
* 1 tbsp Sazon Completa (I use the Badia brand)
* 1 tbsp organic cane sugar

👩‍🍳Simple Instructions:
1. Prep Time
If your ingredients are frozen, be sure to thaw them for a couple of hours before you begin. Preheat your oven to 400°F.
2. Preparing the Pastry Dough
Unfold the puff pastry sheets and lay them flat. Cut each sheet into four even rectangles (two vertical cuts and one horizontal cut). Lightly dust your surface with flour to prevent sticking, then use a rolling pin to gently extend each rectangle by about 1 inch.
3. Making the Filling
Dice the onion and sauté it in a bit of olive or avocado oil until golden brown. Add the Beyond Meat and cook until browned. Dice the tomato and stir it into the mixture, followed by the Sazon Completa. Cook for 2 more minutes, then set the mixture aside to cool.
4. Assembling the Pastries
Divide the filling into eight equal portions. Place a rectangle of dough on your work surface, spoon one portion of filling onto one half, and fold the other half over to cover. Pinch the edges to seal, then place the pastries on a baking sheet lined with parchment paper or a silicone baking mat.
5. The Golden Crust
Mix the sugar with a little water to create a simple glaze. Using a silicone brush, lightly coat the tops of the pastries for a golden, slightly sweet finish.
6. Baking
Bake the pastries for 25–30 minutes, or until they are golden and flaky.
7. Serving
Allow the pastries to cool for a few minutes before serving. Enjoy the crispy, savory goodness with your loved ones!

* 1-2 tsp maple syrup optional, for sweetness

👩‍🍳INSTRUCTIONS
1. Prepare Pistachios: If using raw pistachios, you can lightly toast them in a dry pan or oven at 350°F (175°C) for 5–7 minutes to enhance their flavor. Let them cool slightly.

2. Blend: Add the pistachios to a high-speed blender or food processor. Blend until the pistachios break down into a crumbly texture.

3. Scrape and Blend: Stop the blender/processor occasionally to scrape down the sides. Continue blending until the pistachios turn into a creamy butter (this can take 5–10 minutes, depending on your machine).

4. Adjust Texture: If the butter is too thick, add 1 tablespoon of neutral oil at a time and blend until smooth.

5. Flavor (Optional): Add a pinch of salt for a savory touch or a small amount of maple syrup for sweetness. Blend again until fully incorporated.

6. Store: Transfer the pistachio butter to an airtight jar and store it in the refrigerator for up to 2–3 weeks.

* 1 block (14 oz) extra-firm tofu (freeze and thaw for best texture)
* 2 tbsp soy sauce (or tamari for gluten-free)
* 1 tbsp olive oil or neutral oil
* 1 tbsp nutritional yeast
* 1 tsp garlic powder
* 1 tsp smoked paprika (optional, for a smoky flavor)
* 1/2 tsp onion powder
* 1/4 tsp black pepper
* Optional: 1/2 tsp poultry seasoning for a “chickeny” aroma
* 1 tbsp cornstarch or arrowroot powder (for a crispy coating)

👩‍🍳Instructions
1. Prepare the tofu:
Freeze your tofu overnight and then let it thaw completely. Squeeze out excess water by pressing the tofu between your hands or using a tofu press. The freezing process changes the texture, making it chewier and more “meaty.”
Tear the tofu into irregular strips or chunks to mimic the texture of shredded chicken.

2. Marinate the tofu:
In a mixing bowl, whisk together soy sauce, oil, nutritional yeast, garlic powder, smoked paprika, onion powder, black pepper, and poultry seasoning (if using).
Add the tofu strips to the marinade, gently tossing to coat each piece evenly. Let it marinate for at least 15–20 minutes (the longer, the better—up to a few hours).

3. Coat the tofu:
Sprinkle the cornstarch or arrowroot powder over the marinated tofu and toss lightly to create a thin, crispy coating.

4. Cook the tofu:
* Pan-frying: Heat a non-stick skillet over medium-high heat. Add a small amount of oil and cook the tofu strips in a single layer for 2–3 minutes on each side, until golden and crispy.
* Baking: Preheat the oven to 400°F (200°C). Arrange the tofu strips on a parchment-lined baking sheet and bake for 20–25 minutes, flipping halfway through.
* Air-frying: Preheat the air fryer to 375°F (190°C). Arrange the strips in a single layer and air-fry for 12–15 minutes, shaking the basket halfway.

5. Serve and enjoy:
Serve the tofu strips in wraps, on top of salads, in stir-fries, or as a high-protein snack on their own. They’re great with dipping sauces like BBQ, ranch, or vegan honey mustard.

8. Once the rice is tender and the liquid is absorbed, add the black bean sauce for a rich black color and deeper flavor. Mix thoroughly.
9. Remove from heat, fluff with a fork, and serve warm.

* 1 shredded potato
* 2 breakfast patties (Beyond or Morningstar)
* 8 oz Just Egg or 200g tofu scramble
* shredded cheese (smoked gouda is my favorite)

Garnishes
* green onions optional
* microgreens optional

INSTRUCTIONS
 
* Preheat a pan and drizzle some oil. Spread the shredded potato in a thin layer on the pan. Stir occasionally until golden and crispy.

* Preheat another pan and place the frozen breakfast patties on the pan (no oil necessary). Cook on both sides and crumble them, or keep whole if you prefer to do so, and set aside on a plate until everything else is cooked)

* Once the patties are cooked, add the tofu scramble and mix. Add the cheese and the potato and mix well.
* Serve warm with green onions or microgreens.

🍽️ INGREDIENTS
 
2 tbsp almond flour
2 tbsp whole wheat flour
100 ml almond milk
1 tbsp cashew butter
1 tbsp vegetable butter (I use Smart Balance original) - optional 
1 tsp baking powder
1 tbsp maple syrup - optional

👩‍🍳 INSTRUCTIONS
 
1. In a medium-large bowl, mix the almond flour, whole wheat flour and the baking powder.
2. Add the butter to a small bowl and microwave for 10 seconds to melt it or melt the butter in a bowl over boiling water.
3. In a separate small bowl, add the cashew butter, and pour in the melted butter. Mix well to obtain a smooth texture. If the texture is too thick, add some milk and mix.
4. Pour the cashew butter & butter mix over the flour, add the milk and mix well. You should get a smooth, creamy texture – not too thick and not too liquid.
5. Preheat the pan and pour the batter on the pan using the spoon or ladle, no oil needed. Cook on medium heat until you see small bubbles on the surface of the pancakes.
6. Use the silicone spoon to flip the pancakes. Cook until golden. 1-2 minutes on the pan should be sufficient to cook the inside and get a perfect golden shade.
7. Repeat the process until you run out of batter.
8. Serve with maple syrup, fruits, caramel or chocolate syrup.

🍽️ INGREDIENTS
 

1 pound firm tofu (I use Nasoya)
1 cup unsweetened plant-based milk (I use homemade almond milk)

🧂Seasoning
2 tbsp nutritional yeast
1 tbsp turmeric (for color)
1 tsp salt
1 dash black pepper
1 tsp paprika optional

👩‍🍳 INSTRUCTIONS
 

1. Preheat the pan on medium, add oil (I use avocado oil – it is the healthiest choice for high temperatures).
2. Strain the water tofu comes in and squeeze the tofu block to get rid of the additional water.
3. Cut the tofu into smaller pieces or place the tofu block on the pan directly, then use the potato masher to crumble it.
4. Add the turmeric, salt, black pepper, and nutritional yeast to the pan and mix. Let cook for another 5 minutes and stir to avoid sticking.
5. Add the milk and mix.
6. Garnish with parsley or green onions. Enjoy!
