Prep Time

  • 1 Wooden Rolling Pin
  • 1 Baking Pan
  • 1 Silicone Baking Mat or Parchment Paper

Ingredients  

  • 1 pound Ground Beyond Meat
  • 1 pack puff pastry dough (I use Pepperidge Farm brand – their dough is accidentally vegan)
  • 1 onion
  • 1 tomato (I use organic tomatoes on the vine or Campari)
  • 1 tbsp Sazon Completa (I use the brand Badia)
  • 1 tbsp sugar (I use organic cane sugar)

Instructions 

Prep

  • If your ingredients are frozen, thaw them for a couple of hours.
  • Preheat oven to 400 F degrees.

Preparing the pastry dough

  • Unfold the sheets and lay it flat on the table.
  • Using a knife, make a vertical cut down the middle and then another horizontally so you get 4 even rectangles.
  • Use some flour on the surface of the cutting board to avoid sticking.
  • Using a wooden rolling pin, extend each of the rectangles by about 1 inch on each side.

Preparing the meat filling

  • Dice an onion and preheat the pan.
  • Once the pan is hot, drizzle some olive or avocado oil and add the onions to the pan. Fry for several minutes until golden.
  • Add the Beyond Ground meat to the pan and mix. Cook and mix until the "meat" is no longer pink and it gets brown.
  • Dice the tomato and add to the mix. Sprinkle the seasoning generously. Cook for 2 more minutes and set aside to cool down slightly.

Assembling the pastries

  • Divide the meat filling into 8 equal amounts to make it easy to know how much to add to each pastry.
  • Place one dough rectangle on the board, add the meat filling to one half of the rectangle, then fold the empty side of the dough to cover the filling.
  • Use your fingers to stick the edges of the dough together.
  • Add the pastries in one layer to a baking pan.

The golden crust

  • Mix 1 tbsp of sugar with 2 tbsp of water.
  • Using a silicone brush, apply the sugar mix evenly on each of the pastries.

Baking

  • Bake the pastries for 25-30 min until golden.

Serving

  • Let cool down for 5 min and enjoy!

Notes

*Keep them refrigerated and consume within a week.
*Reheat in the oven/toaster oven for 3-5 minutes.
