Avocado Panna Cotta

Creamy and refreshing vegan avocado panna cotta made with coconut milk, naturally sweetened, and set with agar-agar. A deliciously light and dairy-free dessert!

Ingredients
  

  • 1 large ripe avocado
  • 1 cup coconut milk (full fat for creaminess)
  • ¼ cup maple syrup or agave syrup
  • 1 tsp vanilla extract
  • 1 tbsp lime or lemon juice
  • 1 tsp lime zest optional, for extra flavor
  • 1 tsp agar-agar powder (or 1 tbsp agar flakes)
  • cup water

Instructions
 

  • Prepare the agar-agar: In a small saucepan, whisk agar-agar with water. Bring to a boil, then simmer for 2-3 minutes until fully dissolved. Set aside.
  • Blend the mixture: In a blender, combine avocado, coconut milk, maple syrup, vanilla, lime juice, and zest. Blend until smooth and creamy.
  • Combine: Add the warm agar mixture to the blender and blend again until fully incorporated.
  • Pour into molds: Divide the mixture into ramekins or silicone molds.
  • Chill: Refrigerate for at least 2 hours (or until set).
  • Serve: Run a knife around the edges and gently unmold onto plates. Garnish with fresh berries, shredded coconut, or a drizzle of maple syrup.
