Ingredients
  

  • 1 ripe avocado mashed
  • 1 cup dairy-free dark chocolate chips (or chopped dark chocolate)
  • 1 tsp vanilla extract
  • 1-2 tbsp maple syrup
  • Pinch of salt

Optional for coating:

  • Cocoa powder
  • Chopped nuts (e.g., pistachios, almonds, hazelnuts)
  • Shredded coconut
  • Freeze-dried berries crushed

Instructions
 

  • Melt the chocolate
    Place the chocolate chips in a heatproof bowl over a pot of simmering water (double boiler method). Stir until smooth and melted. Alternatively, microwave in 30-second intervals, stirring between each, until fully melted.
  • Mash the avocado
    In a medium bowl, mash the avocado until smooth and creamy—no lumps!
  • Mix together
    Add the melted chocolate, vanilla extract, maple syrup, and a pinch of salt to the mashed avocado. Mix well until everything is silky smooth and fully combined. Taste and adjust sweetness if needed.
  • Chill
    Cover and refrigerate the mixture for 1–2 hours, or until firm enough to scoop.
  • Form truffles
    Using a small spoon or cookie scoop, scoop out the mixture and roll into bite-sized balls.
  • Coat
    Roll each truffle in your desired coating (cocoa powder, nuts, coconut, etc.).
  • Chill again (optional)
    Place truffles in an airtight container and refrigerate for another 30 minutes to set.

Notes

Storage:

Store in the fridge for up to 5 days, or freeze for up to 1 month (just thaw before eating).
