Ingredients
  

  • 4-5 medium Yukon Gold potatoes
  • 1 white onion diced
  • 2-3 cloves garlic minced
  • salt to taste
  • black pepper to taste
  • 2 tbsp olive or avocado oil

Instructions
 

  • Peel and slice the potatoes into thin wedges or rounds.
  • Dice the onion and mince the garlic.
  • Heat a large pan over medium heat and add the oil.
  • Add the potatoes and onions together, stirring occasionally. Cook for about 10 minutes, until the potatoes become golden and slightly crispy.
  • Stir in the minced garlic, salt, and black pepper. Cook for another 2–3 minutes, allowing the garlic to release its aroma and blend into the dish.
  • Serve hot with a fresh salad and your favorite protein.
