Ingredients
  

  • 1 cup chickpea flour
  • 1 cup water
  • 2 tbsp olive oil
  • salt
  • herbs - rosemary, thyme, dill optional

  • Prepare the Batter:
    In a mixing bowl, whisk together 1 cup of chickpea flour and 1 cup of water until smooth. You can add a pinch of salt if desired. Let the batter rest for about 30 minutes to allow the flour to fully hydrate.
  • Preheat the Oven:
    Preheat your oven to 450°F (230°C). Place a cast-iron skillet or any oven-safe skillet in the oven to heat up.
  • Cook the Socca:
    Once the oven and skillet are hot, carefully remove the skillet and lightly grease it with a bit of oil if you're using any.Pour the batter into the hot skillet, spreading it evenly. The batter should be about 1/4 inch thick.
    Return the skillet to the oven and bake for 10-15 minutes, until the socca is golden brown and the edges are crispy.
  • Serve:
    Remove from the oven and let it cool slightly before slicing. Serve hot, as is, or with your favorite toppings.
