  • 2 large purple sweet potatoes scrubbed and cut into wedges or cubes
  • 2 tbsp olive oil
  • 1 tsp salt adjust to salt
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder

Instructions
 

  • Preheat the Oven:
    Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  • Season the Potatoes:
    In a large bowl, toss the sweet potatoes with olive oil until evenly coated.
    Sprinkle with salt, paprika, garlic powder, and onion powder. Toss again to ensure all the wedges are well seasoned.
  • Bake:
    Spread the potatoes in a single layer on the baking sheet, making sure they aren’t overcrowded.
    Bake for 35-40 minutes, flipping halfway through, until the edges are crispy and the insides are tender.
  • Serve:
    Garnish with fresh herbs if desired and enjoy them hot.
