Ingredients
  

For the chia pudding:

  • 1.5 tbsp chia seeds
  • 1/2 cup plant milk almond, soy, coconut
  • 1 tsp maple syrup or agave syrup
  • 1/2 tsp matcha powder
  • 1-2 drops vanilla extract optional

For the strawberry layer:

  • 1/2 cup fresh or frozen strawberries
  • 1 tsp maple syrup
  • 1/2 tsp lemon juice optional, for brightness

Instructions
 

Make the chia pudding:

  • In a jar or bowl, whisk matcha powder with a tablespoon of plant milk until smooth.
  • Add the rest of the milk, chia seeds, sweetener, and vanilla.
  • Stir well and let sit for 10 minutes. Stir again to prevent clumping.
  • Cover and refrigerate for at least 2 hours, preferably overnight.

Prepare the strawberry layer:

  • In a small saucepan or blender, heat or blend strawberries with maple syrup and optional lemon juice until soft or smooth, depending on your texture preference.
  • Cool before layering.

Assemble:

  • Pour the chia pudding into a glass or jar.
  • Spoon the strawberry mixture on top.
  • Garnish with a sliced strawberry or a sprinkle of matcha (optional).
