Preheat your oven to 350°F (180°C) and grease a small baking dish or line it with parchment paper.
Peel and cube the sweet potato, then steam or boil until soft (10-15 minutes). Mash until smooth or blend for a creamier texture.
In a large bowl, combine the mashed sweet potato, oat flour, cocoa powder, agave syrup, melted vegan butter, vanilla extract, baking powder, and salt. Mix until you get a smooth batter.
Gently fold in chocolate chunks or walnuts if using.
Pour the batter into the prepared baking dish and smooth the surface with a spatula.
Bake for 25–30 minutes or until a toothpick inserted in the center comes out mostly clean.
Let the brownies cool in the pan for about 15 minutes before slicing and enjoying.
