Ingredients
  

  • 1 medium sweet potato (about 1 cup mashed)
  • 1 cup oat flour (or almond flour for extra richness)
  • 1/2 cup unsweetened cocoa powder
  • 1/3 cup maple syrup (or agave syrup)
  • 1/4 cup melted vegan butter (or coconut oil)
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1.4 tsp fine sea salt
  • dark chocolate chunks or crushed walnuts optional

Instructions
 

  • Preheat your oven to 350°F (180°C) and grease a small baking dish or line it with parchment paper.
  • Peel and cube the sweet potato, then steam or boil until soft (10-15 minutes). Mash until smooth or blend for a creamier texture.
  • In a large bowl, combine the mashed sweet potato, oat flour, cocoa powder, agave syrup, melted vegan butter, vanilla extract, baking powder, and salt. Mix until you get a smooth batter.
  • Gently fold in chocolate chunks or walnuts if using.
  • Pour the batter into the prepared baking dish and smooth the surface with a spatula.
  • Bake for 25–30 minutes or until a toothpick inserted in the center comes out mostly clean.
  • Let the brownies cool in the pan for about 15 minutes before slicing and enjoying.

Notes

Tip: Serve warm with a drizzle of almond butter or a scoop of vegan ice cream for an extra indulgent treat!
