- 2 tbsp cocoa powder
- 2 tbsp maple syrup or date syrup
- 1/4 tsp baking powder
- 1/4 cup unsweetened plant milk (almond, oat, or soy)
- 1 tbsp nut butter (almond, peanut, or tahini)
- 1/2 tsp vanilla extract
- Pinch of salt
- 1 tbsp dark chocolate or vegan chocolate chips (for the molten center)
Preheat oven to 375°F (190°C). Lightly grease or line two small ramekins.
In a bowl, whisk together oat flour, cocoa powder, baking powder, and salt.
Stir in maple syrup, plant milk, nut butter, and vanilla until you get a smooth batter.
Divide the batter between two ramekins, filling each about halfway.
Place a piece of dark chocolate in the center of each ramekin and cover it with the remaining batter.
Bake for 10-12 minutes, until the edges are set but the center remains soft.
Let cool for 2 minutes, then gently run a knife around the edges and invert onto a plate.
