- 250 g mushrooms champignon or your preferred type
- 1 onion finely chopped
- 180 g white beans canned or cooked
- 2 tbsp vegan butter
- 2 garlic cloves crushed
- 1 tsp thyme
- 1 tbsp fresh parsley chopped
- 1 tbsp fresh dill chopped
- 40 g walnuts
- 2 tbsp olive oil
- Salt and pepper, to taste
Sauté the vegetables: Heat vegan butter in a pan and sauté the onion until translucent. Add the garlic and cook for 1 more minute.
Cook the mushrooms: Add the mushrooms to the pan, sprinkle with thyme, salt, and pepper. Cook until the mushrooms release their liquid and it evaporates, leaving them golden. Stir in the parsley and dill, then remove from heat.
