Using a small spoon or cookie scoop, scoop out the mixture and roll into bite-sized balls. - Coat
Roll each truffle in your desired coating (cocoa powder, nuts, coconut, etc.). - Chill again (optional)
Place truffles in an airtight container and refrigerate for another 30 minutes to set.
Storage
Store in the fridge for up to 5 days, or freeze for up to 1 month (just thaw before eating).
Recipe Tips
Use a very ripe avocado – It should be soft and easy to mash for the smoothest texture.
Blend for extra smoothness – For an ultra-creamy truffle, blend the avocado and melted chocolate together instead of mixing by hand.
Taste before chilling – Adjust the sweetness with more maple syrup or a pinch of salt before refrigerating the mixture.
Chill long enough – Let the mixture firm up completely in the fridge to make rolling much easier.
Use gloves or chill your hands – If the mixture gets sticky while rolling, cold hands or food-safe gloves help!
Get creative with coatings – Try matcha powder, cinnamon-coconut sugar, or crushed freeze-dried raspberries for unique twists.
